Zucchini and Feta Fritters

Zucchini and Feta Fritters 

These plump, pan-fried fritters are perfect for early fall, when fresh zucchini is in abundance. Serve warm or at room temperature.




 

Equipment



  • Colander
  • Large Bowl
  • Spatula
  • Large Baking Sheet
  • Paper Towels
  • Large, Heavy Skillet
  • Spoon
  • Slotted Spoon or Spatula

 

 Ingredients


  • 3 medium zucchini, coarsely grated (4 cups)
  • 4 large eggs, beaten
  • ½ cups plus 2 Tbsp. all-purpose flour
  • 3 medium scallions, finely chopped (⅓ cup
  • ¼ cup finely chopped fresh dill
  • 2 large garlic cloves, minced (1 tsp.)
  • 1 tsp. ground coriander
  • ½ tsp. sweet paprika
  • Freshly ground black pepper
  • 5 oz. Greek feta, crumbled (1 cup)
  • Olive oil or sunflower oil, for frying
  • Greek plain yogurt, for serving
  • Lemon wedges, for serving

 

 Instructions


  1. Set a colander in the sink and add the zucchini. Sprinkle 1 teaspoon kosher salt over the zucchini, toss gently to combine, and let rest to drain the liquid for 30 minutes. Then use your hands to squeeze out and discard any remaining liquid.
  2. In a large bowl, add the zucchini, eggs, flour, scallions, garlic, dill, coriander, and paprika, and mix well with a spatula. Add ½ teaspoon salt, a generous pinch of black pepper, and the crumbled feta, and fold in gently to incorporate without breaking up the feta too much.
  3. Set the batter by the stove. Line a large baking sheet with paper towels, and set it by the stove as well. In a large, heavy skillet over medium-high heat, add enough oil to reach ¼ inch up the sides. Once hot and just barely beginning to smoke, spoon a few 2-tablespoon-size scoops of batter into the oil (avoid overcrowding). Lightly press each fritter down with the back of a spoon, flattening it slightly. Cook, turning once, until the fritters are golden and crisp on both sides, 5–6 minutes total.
  4. Use a slotted spoon or spatula to transfer the cooked fritters to the lined baking sheet. Continue cooking the rest of the batter. Serve warm or at room temperature, with labneh and lemon wedges.

Greek Feta and Watermelon Salad


 Servings: 1

Ingredients:

For Vinaigrette:
2 tablespoons Champagne vinegar
2 tablespoons extra virgin olive oil
Coarse salt and ground pepper, to taste
For Salad:
1 cup (9 ounces) seedless watermelon, chilled and cut into bite-size pieces
2 ounces (2 cups) watercress leaves, washed and dried
2 ounces Wisconsin feta cheese, cut in planks
1 thinly sliced small red onion
1/2 teaspoon poppy seeds

Cooking Directions:

Combine all vinaigrette ingredients in small bowl; whisk to combine.
In medium bowl, toss watermelon and watercress with 3 tablespoons vinaigrette; arrange on plate. Top with feta and red onion; drizzle remaining dressing over cheese. Sprinkle with poppy seeds before serving.

Kale, Blood Orange and Feta Salad

Servings: 4


Ingredients:

2 heads lacinato kale, destemmed and roughly chopped (about 8 to 10 cups)*
3 blood oranges
1 large or 2 small avocados, peeled and diced
2/3 cup (4 ounces) Greek Imported  feta cheese, crumbled
1/2 cup roasted salted almonds
Olive oil
Salt and pepper, to taste

Directions:


In a large bowl, toss kale with juice from 1/2 blood orange. With your hands, massage until kale starts to soften and wilt, about 2 minutes. Peel and slice the rest of the blood oranges into segments and add to bowl. Combine with avocado, feta and almonds. To finish, drizzle with olive oil, and season with salt and pepper, to taste. Serve immediately.
*Also known as Tuscan or dinosaur kale.

Τυρόψωμο





 
Υλικά
600γρ. αλεύρι δυνατό (ή αλεύρι κατάλληλο για ψωμί ζυμωτό)
1½ φακελάκι μαγιά ξερή
1 κουτ. γλυκού ζάχαρη
1 κουτ. γλυκού αλάτι
1½ φλιτζάνι περίπου νερό χλιαρό λίγο ελαιόλαδο

Για τη γέμιση
250γρ. κρεμμύδια ψιλοκομμένα
50γρ. βούτυρο
50γρ. αλεύρι σκληρό
1 κουτ. σούπας ξίδι
100γρ. ελιές χοντροκομμένες, χωρίς κουκούτσι (προαιρετικά)
300γρ. κεφαλογραβιέρα ή μπάτζο Μακεδονίας τριμμένο



Διαδικασία

Λιώνετε το βούτυρο και σοτάρετε τα κρεμμύδια μέχρι να γίνουν διάφανα και τρυφερά. Σβήνετε με το ξίδι.

Απομακρύνετε την κατσαρόλα από τη φωτιά και προσθέτετε τα 50γρ. αλεύρι ανακατεύοντας ζωηρά.

Προσθέτετε το τυρί και τις ελιές (αν χρησιμοποιήσετε) και αφήνετε τη γέμιση να περιμένει.

Στο μεταξύ, ανακατεύετε το αλεύρι με τη μαγιά και τη ζάχαρη. Διαλύετε το αλάτι στο νερό και το προσθέτετε λίγο λίγο στο αλεύρι ζυμώνοντας στο μίξερ με το γάντζο ζυμώματος ή με το χέρι μέχρι να γίνει το μίγμα λείο και ομοιογενές.

Μεταφέρετε τη ζύμη σε αλευρωμένο πάγκο και συνεχίζετε το ζύμωμα για 10 λεπτά ακόμα τεντώνοντας και μαζεύοντας τη ζύμη με το κάτω μέρος της παλάμης.

Λαδώνετε ένα μπολ και βάζετε μέσα τη ζύμη πλασμένη σε μπάλα.

Την αφήνετε να φουσκώσει και να διπλασιαστεί σε όγκο. Κατόπιν ανακατεύετε τη γέμιση στη φουσκωμένη ζύμη και τη ζυμώνετε ξανά για 10 δευτερόλεπτα.

Σκεπάζετε τη ζύμη και την αφήνετε 10 λεπτά.

Ξαναζυμώνετε για 10 δευτερόλεπτα και την αφήνετε ξανά για 10 λεπτά να ξεκουραστεί.

Ξαναζυμώνετε για 10 λεπτά και αφήνετε τη ζύμη για 30 λεπτά.

Τη χωρίζετε κατόπιν σε τέσσερα κομμάτια, πλάθετε στρογγυλά καρβέλια ή μακρόστενες φραντζολίτσες, τα αραδιάζετε σε λαδωμένο ταψί, τα σκεπάζετε και τα αφήνετε για 40 λεπτά να φουσκώσουν.

Προθερμένετε τον φούρνο στους 180 βαθμούς. Αλείφετε τα καρβέλια με αβγό και γάλα, χαράζετε την επιφάνεια σταυρωτά με κοφτερό κοπίδι και ψήνετε στον φούρνο για 40 λεπτά μέχρι να ροδίσουν.
